  • 1/2 cup shredded sharp cheddar cheese

  • 1/4 cup finely diced celery
  • 2 green onions, thinly sliced
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C). Scrub potatoes clean, pat dry, and pierce with a fork about 8-10 times.
  2. Rub potatoes with olive oil and sprinkle generously with salt. Place directly on oven rack or on a baking sheet. Bake for 45-60 minutes until skin is crispy and a knife slides in easily.
  3. While potatoes bake, make the buffalo chicken mixture. In a small bowl, whisk together hot sauce and melted butter. In a larger bowl, combine shredded chicken, buffalo sauce mixture, 1/4 cup ranch or blue cheese dressing, diced celery, and a pinch of salt and pepper. Stir well and let sit while potatoes finish baking.
  4. Once potatoes are done, let cool for 5 minutes. Carefully slice each potato open lengthwise and fluff insides with a fork.
  5. Divide buffalo chicken mixture evenly among the four potatoes. Top each with about 2 tablespoons shredded cheddar cheese and blue cheese crumbles if using.
  6. Return stuffed potatoes to the oven (on baking sheet) and bake for another 5-7 minutes until cheese is melted and bubbly. Optionally, broil for the last minute for extra color.
  7. Remove from oven and drizzle with additional ranch or blue cheese dressing. Garnish with sliced green onions and extra celery slices. Serve immediately.

Notes

Let the chicken sit in the sauce for at least 10 minutes to absorb flavor. For extra crispy skins, don’t skip the olive oil. If in a rush, microwave potatoes for 5-7 minutes per potato, then finish in a hot oven for 10 minutes. For a milder heat, use mild buffalo sauce or add extra butter. Don’t skip the celery for crunch.
