Instructions

  1. Preheat oven to 400°F (200°C). Wash sweet potatoes and prick them with a fork.
  2. Roast sweet potatoes directly on the rack or on a lined baking sheet for 45-60 minutes until soft.
  3. Let potatoes cool until safe to handle, cut in half, and scoop flesh into a large mixing bowl.
  4. Mash the warm potatoes until smooth.
  5. In a small saucepan, melt butter over medium heat. Add brown sugar, salt, cinnamon, and nutmeg. Stir until dissolved and bubbly (2-3 minutes).
  6. Remove saucepan from heat and stir in heavy cream, bourbon, and vanilla extract.
  7. Pour the wet mixture over the mashed potatoes and stir until fully combined. Taste and adjust sweetness if needed.
  8. Transfer mixture to an 8×8 or 9×9 inch casserole dish and smooth the top.
  9. Add desired topping (e.g., pecans or marshmallows).
  10. Bake at 350°F (175°C) for 20-25 minutes until bubbly and topping is golden.
  11. Let rest for 10 minutes before serving.
