  • 1 teaspoon smoked paprika
  • 1/2 cup tomato sauce
  • 1 cup shredded mozzarella cheese, divided
  • 4 large bell peppers (orange or yellow work best)
  • 1 can (8 ounces) refrigerated crescent roll dough
  • 1216 black olive slices (for the eyes)
  • 1 tablespoon melted butter

Instructions

  1. Preheat your oven to 375°F (190°C). Bring a large pot of water to a boil. Cut the tops off your bell peppers and remove the seeds and membranes. Drop the peppers into the boiling water for 3 minutes. Drain and set them upside down on paper towels.
  2. In a large skillet over medium heat, brown the ground beef with the diced onion. Break it up with a wooden spoon as it cooks—about 5 to 7 minutes. Drain off any excess fat. Add the minced garlic and cook for 30 seconds until fragrant.
  3. Stir in the salt, pepper, oregano, and smoked paprika. Add the tomato sauce and cooked rice. Let everything simmer for 2 minutes. Remove from heat and stir in half a cup of the shredded mozzarella. Taste and adjust seasoning if needed.

  9. Melt your tablespoon of butter and brush it over the dough strips.
