Best Lighter Halloween Deviled Eggs with Olive Spiders Recipe

These lighter deviled eggs use avocado and Greek yogurt instead of mayo for a creamy, tangy filling. Topped with olive spiders, they’re a fun and healthy Halloween appetizer.

  • 6 large eggs
  • 1 ripe avocado, halved and pitted
  • 2 tablespoons plain Greek yogurt
  • 1 teaspoon Dijon mustard
  • 1 tablespoon pickle juice
  • Salt and black pepper, to taste
  • Pinch of smoked paprika, for garnish (optional)
  • 6 pitted black olives (large, for spider bodies)
  • 12 small pitted black olives (for spider legs)

Instructions

  1. Hard-boil the eggs: Place eggs in a single layer in a medium saucepan. Cover with cold water by about an inch. Bring to a rolling boil over high heat, then cover, remove from heat, and let sit for exactly 10 minutes. Prepare an ice bath. Transfer eggs to ice bath with a slotted spoon and cool for 5 minutes.
  2. Peel and halve the eggs: Gently tap each egg on the counter to crack the shell, roll between palms to loosen, and peel under running cold water. Pat dry, slice each egg in half lengthwise, and pop out yolks into a small mixing bowl. Arrange 12 white halves on a serving platter, cut-side up.
  3. Make the filling: To the bowl with yolks, add avocado, Greek yogurt, Dijon mustard, and pickle juice. Mash together with a fork until smooth and creamy. Season with salt and pepper to taste.
  4. Fill the eggs: Spoon filling into a piping bag or zip-top bag with a small corner snipped off. Pipe filling into each egg white half, mounding slightly. Alternatively, use a small spoon.
  5. Create the olive spiders: For each spider, take one large olive (body) and two small olives. Slice small olives lengthwise into thin strips (4 strips per olive, 8 legs per spider). Place one large olive on top of each filled egg. Arrange 8 leg strips on either side of the body, pressing gently into filling.
  6. Garnish and chill: Sprinkle a tiny pinch of smoked paprika over each egg. Refrigerate for at least 15 minutes before serving.

Notes

Use older eggs for easier peeling. Don’t overmix the filling. For the olive spider legs, a tiny dab of filling on the back of each leg strip acts as edible glue. Boil and peel eggs the night before for best results. The filling may darken slightly from avocado; a squeeze of lemon juice helps prevent browning.
