This loaded seven-layer game day dip with fresh guacamole is creamy, crunchy, tangy, and downright addictive. It’s the ultimate crowd-pleaser for Super Bowl parties, tailgates, or any gathering where chips are involved.

  • 1 can (16 oz) refried beans (preferably Rosarita or Old El Paso)
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon chili powder
  • 1 tablespoon water
  • 3 ripe avocados
  • 1/4 cup finely diced red onion
  • 1 jalapeño, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime (about 2 tablespoons)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 Roma tomato, seeded and diced (optional)
  • 1 cup sour cream (full-fat recommended, Greek yogurt works)
  • 1/2 packet taco seasoning (or 1 teaspoon homemade blend: chili powder, cumin, garlic powder, onion powder)
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup pico de gallo or chunky salsa (drained)
  • 1 can (2.25 oz) sliced black olives, drained
  • 1/4 cup sliced green onions (green parts only)
  • 1/4 cup fresh cilantro, chopped (for garnish)

Instructions

  1. Preheat oven to 350°F (175°C). Take cream cheese or sour cream out of fridge to come to room temperature.
  2. In a small bowl, combine refried beans, cumin, chili powder, and water. Stir until smooth. Spread evenly across the bottom of a 9×13-inch baking dish, about 1/4-inch thick.
  3. Cut avocados in half, remove pits, and scoop flesh into a large bowl. Mash with a fork to desired consistency (slightly chunky recommended). Add red onion, jalapeño, cilantro, lime juice, salt, pepper, and tomato if using. Stir gently. Taste and adjust seasoning.
  4. Spoon guacamole over refried beans and spread evenly, leaving a small border around edges.
  5. In a small bowl, mix sour cream with taco seasoning until combined. Spread over guacamole layer. If too thick, add a teaspoon of milk to loosen.
  6. Sprinkle shredded cheddar and Monterey Jack evenly over sour cream layer.
  7. Bake for 15-20 minutes, until cheese is melted and edges are bubbly and slightly browned.
  8. Remove from oven and let cool for 2-3 minutes. Spoon pico de gallo or salsa over top, followed by black olives, green onions, and fresh cilantro.
  9. Serve immediately with tortilla chips.

Notes

For best results, shred your own cheese as pre-shredded cheese has anti-caking agents that prevent smooth melting. Drain salsa or pico de gallo to prevent watery dip. Let dip rest 5-10 minutes after baking for easier scooping. The guacamole layer acts as a barrier to prevent soggy layers. For make-ahead, assemble all layers except fresh toppings up to 24 hours in advance, refrigerate, then bake and add fresh toppings before serving.
