  • 8 oz cream cheese, softened
  • 2 cups shredded Monterey Jack cheese
  • 1/2 cup whole milk
  • 1 can (10 oz) diced tomatoes with green chilies, undrained
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon cumin
  • Salt and black pepper to taste
  • Optional: 1 jalapeño, seeded and minced
  • Optional: 1/4 cup chopped fresh cilantro for garnish

Instructions

  1. Brown the chorizo: Place a large skillet over medium-high heat. Add the chorizo, breaking it up with a wooden spoon. Cook for 5-7 minutes until browned and crispy at the edges. Spoon out excess fat if desired, but leave a little for flavor.
  2. Lower the heat to medium-low. Add the cream cheese to the skillet and stir constantly until melted and smooth, fully combined with the chorizo.
  3. Add the milk, smoked paprika, garlic powder, and cumin. Stir until creamy. If too thick, add another splash of milk.
  4. Add the undrained can of diced tomatoes with green chilies. Stir to combine. Gradually add the shredded Monterey Jack cheese, handful by handful, stirring after each addition until melted.
  5. Simmer on low heat for 2-3 minutes, stirring occasionally, until thickened and bubbly. Adjust consistency with more milk if needed.
  6. Taste and adjust seasoning with salt and pepper. Stir in minced jalapeño if using.
  7. Serve immediately, garnished with fresh cilantro and a sprinkle of smoked paprika. Keep warm in a slow cooker on the ‘warm’ setting for parties.
