  • 1/2 cup miniature marshmallows
  • 1 cup canned pineapple chunks (drained)
  • 2 medium oranges (peeled and segmented, seeds removed)
  • 1/2 cup shredded sweetened coconut (optional)
  • 1 tablespoon granulated sugar

Instructions

  1. Chill your mixing bowl and beaters in the fridge or freezer for about 10 minutes.
  2. Peel and segment the oranges carefully, removing any seeds and pith. Drain the canned pineapple chunks well.
  3. Pour 1 cup of chilled heavy whipping cream into your chilled bowl. Add 1 tablespoon granulated sugar. Beat on medium-high speed until soft peaks form, about 3-5 minutes. Stop before it becomes too stiff.
  4. Gently fold the miniature marshmallows, pineapple chunks, orange segments, and shredded coconut (if using) into the whipped cream using a spatula to keep the mixture light and airy.
  5. Cover the bowl with plastic wrap and refrigerate for at least 1 hour to let flavors meld and marshmallows soften.
  6. Give the salad a gentle stir before serving. Portion into bowls or a glass dish and serve chilled.
