A nostalgic and comforting dessert featuring tart and sweet apples topped with a shattery, golden oat crumble. This recipe balances texture and flavor for a perfect homemade treat.

Ingredients

Scale
  • 67 medium Granny Smith apples, peeled, cored, and sliced
  • 2 large Honeycrisp apples, peeled, cored, and sliced
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1 tablespoon lemon juice
  • 2 tablespoons cornstarch
  • 1 cup old-fashioned rolled oats
  • 1 cup all-purpose flour
  • 1 cup firmly packed brown sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, cold and cubed

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Peel, core, and slice the apples into uniform half-inch thick slices and place them in a large bowl.
  3. Sprinkle granulated sugar, cinnamon, nutmeg, lemon juice, and cornstarch over the sliced apples. Toss gently to coat and let sit for 10 minutes.
  4. In a separate large bowl, whisk together rolled oats, flour, brown sugar, cinnamon, and salt.
  5. Add the cold, cubed butter to the dry ingredients. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs with some larger clumps.
  6. Transfer the seasoned apples to a 9×13 inch baking dish or cast-iron skillet and spread evenly.
  7. Sprinkle the oat crumble topping over the apples, covering them completely, and press down gently.
  8. Bake for 45-50 minutes until the topping is golden brown and apple juices are bubbling. Cover loosely with foil if the top browns too quickly.
  9. Let the crisp cool for at least 15 minutes before serving warm.

Notes

Ensure butter is cold to create a flaky topping. Use a mix of tart (Granny Smith) and sweet (Honeycrisp) apples for best texture. For gluten-free, use GF oats and flour. For dairy-free/vegan, substitute butter with coconut oil or vegan butter. Store leftovers in an airtight container in the fridge for up to 5 days; reheat to restore crispiness.
