  • 2 lbs boneless skinless chicken breasts or thighs
  • 2 cans (15 oz each) white beans (cannellini or great northern), drained and rinsed
  • 1 can (15 oz) canned corn, drained
  • 1 can (4 oz) diced green chilies, diced (fire-roasted if possible)
  • 4 cups low sodium chicken broth
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • Juice and zest of 1 fresh lime
  • Salt to taste (start with 1 teaspoon)
  • Black pepper to taste (start with ½ teaspoon)
  • 1 tablespoon olive oil
  • Optional toppings: shredded cheese, sour cream, chopped cilantro, sliced jalapeños

Instructions

  1. Heat 1 tablespoon olive oil in a large skillet over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
  2. Add minced garlic to the skillet and cook for another minute until fragrant.
  3. Place the chicken breasts or thighs at the bottom of the crockpot.
  4. Pour the sautéed onion and garlic mixture over the chicken.
  5. Scatter the rinsed white beans, drained corn, and diced green chilies evenly over the chicken.
  6. Sprinkle in ground cumin, dried oregano, salt, and black pepper.
  7. Pour 4 cups of chicken broth over all ingredients and gently stir to combine.
  8. Cover and cook on low for 6 hours until chicken is tender.
  9. Remove chicken from crockpot and shred with two forks.
  10. Return shredded chicken to the crockpot and stir well.
  11. Stir in the juice and zest of one fresh lime.
  12. Taste and adjust seasoning with additional salt or pepper if needed.
  13. Serve hot with optional toppings such as shredded cheese, sour cream, cilantro, and sliced jalapeños.
