  • 1 cup pumpkin puree (not pie filling)
  • 6 large eggs, room temperature
  • 2 cups whole milk
  • 1/2 cup heavy cream
  • 1/3 cup real maple syrup
  • 4 tablespoons unsalted butter, melted
  • 2 teaspoons pumpkin pie spice
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1/2 cup streusel topping (optional: flour, brown sugar, cold butter, pecans)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Tear bread into rough 1-inch pieces and place in a 9×13 inch baking dish. If bread is fresh, toast at 300°F for 10 minutes to dry out, then cool.
  3. In a large bowl, whisk eggs until lightly beaten. Add pumpkin puree, maple syrup, melted butter, heavy cream, whole milk, sugar, pumpkin pie spice, and salt. Whisk vigorously until smooth.
  4. Pour custard mixture evenly over the bread. Press down on bread pieces to ensure they are fully submerged.
  5. Cover dish tightly with plastic wrap or foil and refrigerate for at least 8 hours or overnight.
  6. Remove from refrigerator and preheat oven to 350°F (175°C). Remove cover.
  7. If using streusel topping, sprinkle evenly over the top.
  8. Bake for 45-50 minutes until top is golden brown and puffed, and center is set (knife inserted comes out clean).
  9. Let rest for 10 minutes before slicing and serving warm.

Notes

Use stale bread to prevent sogginess. Ensure bread is fully submerged in the custard. Let the casserole rest for 10 minutes after baking to allow the custard to set. Can be frozen before or after baking.
