Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine sliced peaches with granulated sugar, brown sugar, lemon juice, cornstarch, and ground cinnamon. Stir gently to coat evenly and set aside to macerate for 10 minutes.
  3. In another bowl, whisk together flour, baking powder, salt, and cinnamon. Add cold cubed butter and cut into the flour mixture using a pastry cutter or fork until coarse crumbs form with pea-sized butter bits.
  4. Pour in milk or buttermilk and stir gently until just combined; the batter should be slightly sticky but not wet.
