  • 2 large eggs, room temperature
  • ½ cup unsalted butter, softened (for filling)
  • 1 cup brown sugar, packed
  • 2 tablespoons ground cinnamon

  • 1 cup powdered sugar, sifted (for glaze)
  • 3 tablespoons real maple syrup
  • 12 tablespoons heavy cream
  • A tiny pinch of salt (for glaze)

Instructions

  1. In a stand mixer bowl, combine warm milk, sugar, and yeast. Let sit for 5-10 minutes until foamy.
  2. Add melted butter, pumpkin puree, and eggs to the yeast mixture. Mix on low until combined.
  3. Add flour and salt. Mix on low, then increase to medium speed for 3-4 minutes until dough pulls away from sides and is soft/sticky.
  4. Transfer dough to a greased bowl, cover, and let rise in a warm spot for 1 hour until doubled.
  5. While dough rises, mix brown sugar, cinnamon, and nutmeg. Soften butter for filling.
  6. Punch down risen dough. Roll into a 12×16 inch rectangle on a floured surface.
  7. Spread softened butter over dough, leaving a border. Sprinkle sugar-cinnamon mixture evenly.
  8. Roll dough tightly into a log from the long edge. Pinch seam to seal.
  9. Cut log into 12 equal rolls using dental floss or a sharp knife. Place cut-side up in a greased 9×13 inch baking dish.
  10. Cover rolls and let rise again for 30-45 minutes until puffy. Preheat oven to 350°F (175°C) during the last 15 minutes.
  11. Bake for 25-30 minutes until golden brown. Internal temperature should reach 190°F.
  12. While rolls bake, whisk powdered sugar, maple syrup, cream, and salt until smooth.
  13. Let rolls cool for 5-10 minutes. Drizzle with glaze and serve warm.

Notes

Ensure milk is 110°F to activate yeast without killing it. Do not over-knead the dough. Use plain pumpkin puree, not pie filling. Glaze rolls while warm, not hot or cold, for best texture. Can be made ahead: refrigerate dough after first rise overnight.
