  • 1/2 cup (120g) 100% pure pumpkin puree
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract

  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon (for dough)
  • 1/2 cup granulated sugar (for rolling)
  • 1 tablespoon ground cinnamon (for rolling)

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, beat the softened butter and 1 cup granulated sugar together until light and fluffy (about 3 minutes).
  3. Add the pumpkin puree, egg, and vanilla extract to the butter mixture. Mix on low speed until just combined.
  4. In a separate medium bowl, whisk together the flour, baking soda, cream of tartar, baking powder, salt, and 2 teaspoons ground cinnamon.
  5. Gradually add the dry ingredients to the wet mixture. Mix on low speed until a soft dough forms. Do not overmix.
  6. In a small shallow bowl, mix the 1/2 cup granulated sugar with the 1 tablespoon ground cinnamon for the coating.
  7. Scoop or spoon the dough into 1.5-inch balls. Roll each ball in the cinnamon-sugar mixture until fully coated.
  8. Place coated balls on prepared baking sheets, spacing them about 2 inches apart.
  9. Bake for 10 to 12 minutes, or until edges are set and lightly golden but centers still look slightly soft.
  10. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Use 100% pure pumpkin puree, not pie filling. Ensure butter is softened but not melted. Do not overbake as cookies continue to cook on the hot pan. For softer cookies, store with a slice of bread. Dough can be chilled for 15-20 minutes if too sticky.
