  • 1 cup (245g) pumpkin puree (100% pure, not pie filling)
  • 1/2 cup (120ml) vegetable oil
  • 2 large eggs (room temperature)
  • 1 teaspoon vanilla extract
  • 1 1/2 cups (190g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup (150g) granulated sugar
  • 2 teaspoons pumpkin pie spice
  • 1/2 teaspoon ground ginger
  • 1 teaspoon cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×5 inch loaf pan with parchment paper.
  2. In a large mixing bowl, whisk together sourdough discard, pumpkin puree, vegetable oil, eggs, and vanilla extract until smooth.
  3. In a separate medium bowl, whisk together flour, baking soda, baking powder, salt, pumpkin pie spice, ground ginger, and cinnamon.
  4. Pour dry ingredients into wet ingredients. Use a rubber spatula to fold until just combined. Do not overmix.
  5. Pour batter into prepared loaf pan and smooth the top.
  6. Bake for 50-60 minutes. If the top browns too quickly around the 40-minute mark, tent loosely with aluminum foil.
  7. Test for doneness by inserting a toothpick into the center; it should come out clean or with moist crumbs.
  8. Cool in the pan for 10 minutes, then lift out using parchment paper and place on a cooling rack to cool completely before slicing.

Ensure ingredients are at room temperature for best results. Do not overmix the batter to avoid a tough texture. If using fresh pumpkin, squeeze out excess water.
