  • 2 medium apples (Honeycrisp or Fuji), peeled, cored, and chopped
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup full-fat coconut milk
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper (or to taste)
  • Optional garnishes: toasted pumpkin seeds, coconut cream, fresh thyme, maple syrup

Instructions

  1. Prep the squash: Peel the butternut squash, cut off the top and bottom, slice in half lengthwise, scoop out seeds, and cube into 1-inch pieces.
  2. Prep the apples and onion: Peel, core, and chop the apples into 1-inch chunks. Dice the onion. Mince the garlic. Grate the ginger.
  3. Layer everything in the slow cooker: Add the cubed squash, chopped apples, diced onion, minced garlic, and grated ginger. Sprinkle with cumin, cinnamon, salt, and pepper. Pour in the vegetable broth. Stir to combine.
  4. Cook low and slow: Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the squash is fork-tender.
  5. Add the coconut milk: Stir in the full-fat coconut milk. Taste and adjust salt and pepper if needed.
  6. Blend until smooth: Use an immersion blender to puree the soup directly in the slow cooker. Alternatively, let cool slightly and blend in batches in a regular blender, venting the lid.
  7. Final taste and serve: Adjust seasoning if needed. Ladle into bowls and garnish as desired.

Notes

For deeper flavor, sauté the onion and garlic in oil before adding to the slow cooker. The soup thickens as it sits; thin with broth when reheating. This soup tastes even better the next day.
