  • 1.5 lbs (680 g) boneless, skinless chicken thighs
  • 1/2 cup (60 g) sun-dried tomatoes, chopped (preferably oil-packed)
  • 1 cup (240 ml) heavy cream
  • 4 cups (960 ml) low-sodium chicken broth
  • 1/2 cup (50 g) grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 medium onion, diced
  • 1 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Dice the onion and mince the garlic. Chop the sun-dried tomatoes into small pieces. Pat the chicken thighs dry and season lightly with salt and pepper.
  2. Place the diced onion and minced garlic in the bottom of the slow cooker. Add the chicken thighs on top, then sprinkle the chopped sun-dried tomatoes over everything. Pour the chicken broth around the sides.
  3. Sprinkle the dried oregano, red pepper flakes (if using), and a pinch of salt and pepper over the top. Gently stir, leaving the chicken mostly on top. Cover with the lid.
  4. Cook on low for 6 hours or high for 4 hours, until the chicken shreds easily with a fork. Do not open the lid during the first 3 hours.
  5. Carefully remove the chicken thighs to a cutting board or bowl. Use two forks to shred the meat into bite-sized pieces. Discard any large pieces of fat or gristle.
  6. Return the shredded chicken to the slow cooker. Stir in the heavy cream and grated Parmesan cheese. Let cook on low for another 15-20 minutes, uncovered, to allow the flavors to meld and the soup to thicken slightly. Taste and adjust salt and pepper.
  7. Ladle the soup into bowls. Garnish with fresh basil or extra Parmesan if desired. Serve hot with crusty bread or a simple green salad.

Notes

For best results, add the cream at the end to prevent curdling. The soup tastes even better the next day as flavors meld. To thicken, mix 2 tablespoons cornstarch with 2 tablespoons cold water and stir in after adding cream. For dairy-free, use full-fat coconut milk and omit Parmesan or use dairy-free alternative.
