A tender and flavorful slow cooker pot roast with vegetables that is easy to prepare and perfect for cozy nights. The slow cooking process makes the meat melt-in-your-mouth tender while the vegetables soak up all the savory juices.

Ingredients

Scale
  • 3 to 4 pounds beef chuck roast, trimmed of excess fat
  • 2 tablespoons olive oil
  • 1 cup beef broth (preferably low sodium)
  • 2 tablespoons Worcestershire sauce
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and freshly ground black pepper, to taste
  • 4 large carrots, peeled and cut into chunks
  • 3 medium potatoes, peeled and cubed (Yukon Gold or red potatoes)
  • 1 large onion, thickly sliced
  • 2 celery stalks, chopped
  • Optional: Fresh parsley, chopped, for garnish
  • Optional: 1 tablespoon tomato paste

Instructions

  1. Peel and cut the carrots and potatoes into large chunks. Slice the onion into thick rounds and chop the celery. Set aside.
  2. Pat the beef chuck roast dry with paper towels. Season all sides generously with salt, pepper, dried thyme, and rosemary.
  3. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Sear the roast on each side until browned, about 3-4 minutes per side.
  4. Place the seared roast into the slow cooker. Surround it with the prepared vegetables.
  5. In a small bowl, whisk together beef broth, Worcestershire sauce, minced garlic, and tomato paste if using. Pour this mixture over the roast and vegetables.
  6. Cover and cook on low heat for 6 to 8 hours, or on high for about 4 hours. The meat should be fork-tender and vegetables soft but not mushy.
  7. Check for doneness; if needed, cook an additional 30 minutes.
  8. Remove the roast and slice or shred it. Arrange on a platter with the vegetables. Spoon some of the cooking juices over the top and sprinkle with fresh parsley.

Notes

Searing the meat before slow cooking enhances flavor and color. Avoid lifting the slow cooker lid frequently to prevent heat loss. If the gravy is thin after cooking, thicken it with a cornstarch slurry on the stove. For gluten-free, ensure Worcestershire sauce and broth are gluten-free. Variations include vegetarian options using portobello mushrooms and vegetable broth, low-carb versions skipping potatoes, and adding seasonal vegetables or spices.
