A warm spiced apple cider base meets cold bubbly prosecco for the ultimate holiday mimosa bar. This easy, crowd-pleasing drink comes together in under 15 minutes and looks like you spent hours planning.

  • 3 star anise pods
  • 4 whole cloves
  • 1 tablespoon honey (optional)
  • 1 orange, sliced into rounds
  • 1 bottle (750 ml) sparkling wine or prosecco
  • 1 cup apple cider, chilled
  • Fresh rosemary sprigs for garnish
  • 1 apple, thinly sliced (Honeycrisp or Fuji)
  • 1 orange, thinly sliced for garnish
  • Optional: Pomegranate seeds
  • Optional: Cinnamon sugar for rimming glasses (2 tablespoons sugar + 1 teaspoon ground cinnamon)

Instructions

  1. Make the mulled cider base: Pour 4 cups apple cider into a saucepan. Add 2 cinnamon sticks, 3 star anise pods, 4 whole cloves, and orange slices. Add honey if using. Bring to a gentle simmer over medium heat (do not boil). Simmer for 10-12 minutes.
  2. Strain and cool the cider: Remove pot from heat. Pour through a fine-mesh strainer into a carafe or pitcher. Discard solids. Let cool for about 10 minutes at room temperature (should be warm, not hot).
  3. Prep garnishes: Slice apple and orange into thin rounds (about 1/4-inch thick). Cut a small slit in each slice to sit on glass rim. Rinse rosemary sprigs. If rimming glasses, mix cinnamon sugar on a small plate, wet glass rim with orange slice, and dip in sugar mixture.
  4. Chill sparkling wine: Ensure prosecco or sparkling wine is well-chilled (refrigerate at least 2 hours or ice water bath for 20 minutes).
  5. Set up the bar: Arrange carafe of warm mulled cider, chilled sparkling wine, and garnishes on a serving table. Include non-alcoholic options if desired.
  6. Assemble mimosas: Fill each glass about one-third full with warm mulled cider. Top with chilled sparkling wine (1:2 ratio of cider to wine is recommended). Garnish with apple slice, orange slice, and rosemary sprig. Add pomegranate seeds if using.

Notes

Don’t oversimmer the cider (max 15 minutes) to avoid bitterness. Pour cider first, then sparkling wine to prevent foaming. Make mulled cider base up to 3 days ahead. Use a dry sparkling wine to balance sweetness. For non-alcoholic version, substitute sparkling apple cider or ginger ale.
