A quick, creamy, and spicy buffalo chicken dip made with rotisserie chicken, cream cheese, buffalo sauce, and ranch dressing. Perfect for game day gatherings and ready in under 20 minutes.

Ingredients

Scale
  • 2 cups shredded rotisserie chicken
  • 8 ounces full-fat cream cheese, softened to room temperature
  • 1/2 cup buffalo wing sauce (e.g., Frank’s RedHot)
  • 1/2 cup creamy ranch dressing
  • 1 cup sharp cheddar cheese, freshly shredded
  • 2 stalks green onions, finely chopped
  • 1/4 cup blue cheese crumbles

Instructions

  1. Shred the cooked chicken into bite-sized pieces and set aside.
  2. Cut the softened cream cheese into small cubes.
  3. In a large mixing bowl, combine the cream cheese cubes, buffalo sauce, and ranch dressing. Mix with a hand mixer or fork until smooth and uniform.
  4. Gently fold in the shredded chicken until evenly coated.
  5. Stir in half of the shredded cheddar cheese.
  6. Transfer the mixture to a slow cooker or a greased 9-inch pie dish/baking dish.
  7. Top with the remaining cheddar cheese and blue cheese crumbles.
  8. If using an oven, cover with foil and bake at 350°F (175°C) for 20 minutes. Remove foil and bake for another 5-10 minutes until bubbly and golden.
  9. If using a slow cooker, set to low and heat for 1-2 hours, stirring occasionally, until hot and creamy.

Notes

Ensure cream cheese is softened to room temperature to avoid lumps. Use freshly shredded cheddar for better melting. For a lighter option, use light cream cheese and low-fat ranch. This recipe is naturally gluten-free if using certified gluten-free sauces.
