  • 8 large eggs, room temperature
  • 2 cups (480 ml) whole milk
  • 6 oz (170 g) cream cheese, cut into small dollops
  • 1 cup (100 g) shredded sharp cheddar cheese
  • 2 tablespoons everything bagel seasoning, plus more for sprinkling on top
  • 1 small yellow onion, finely diced
  • 1 teaspoon garlic powder
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon butter, melted (to grease the baking dish and add flavor)

Instructions

  1. Preheat your oven to 350°F (175°C). Butter your 9×13 inch baking dish thoroughly to prevent sticking.
  2. Cube the everything bagels into roughly 1-inch pieces. Using day-old bagels helps them absorb the custard without turning mushy. Set aside.
  3. Sauté the finely diced onion in a small pan over medium heat with a teaspoon of butter until translucent and fragrant, about 5 minutes.
  4. In a large mixing bowl, whisk together the 8 large eggs, 2 cups whole milk, garlic powder, salt, and pepper until fully combined and slightly frothy.
  5. In the buttered baking dish, spread half of the cubed bagels evenly. Sprinkle half the sautéed onion and half the shredded cheddar cheese over the bagels. Dollop half the cream cheese pieces across the top. Repeat layering with the remaining bagels, onions, cheddar, and cream cheese dollops.
  6. Pour the custard evenly over the layered bagels. Press down gently with a spatula or your hands to help the bagels soak up the liquid. Sprinkle the entire surface generously with the everything bagel seasoning.
  7. Let the casserole rest for about 10 minutes to allow the bagels to absorb the custard fully.
  8. Bake uncovered in the preheated oven for 40-45 minutes, or until the top is golden brown and the custard is set but still tender when you jiggle the pan slightly.
  9. Cool slightly before serving, letting it rest for 5-10 minutes to make slicing easier and flavors more settled.
