Instructions

  1. Macerate the peaches: Combine sliced peaches with 1/2 cup sugar and lemon juice in a mixing bowl. Stir gently to coat, then let sit at room temperature for 15 minutes.
  2. Cook the peach mixture: Transfer peaches and juices to a medium saucepan. Simmer over medium-low heat for about 10 minutes, stirring occasionally, until peaches are soft but still hold some shape. Remove from heat and let cool to room temperature.
  3. Prepare the ice cream base: In a separate bowl, whisk together heavy cream, whole milk, remaining 1/4 cup sugar, vanilla extract, and a pinch of salt until sugar is dissolved.
  4. Combine and chill: Stir the cooled peach mixture into the cream base. Optionally blend briefly for a smoother texture or leave some peach chunks. Cover and refrigerate for at least 30 minutes or overnight.
  5. Churn the ice cream: Pour the chilled mixture into a pre-frozen ice cream maker bowl. Churn according to manufacturer’s instructions until soft-serve consistency is reached (about 20-25 minutes).
