  • 1 cup (240 ml) heavy cream
  • 1/2 cup (120 ml) chicken broth
  • 3 cloves garlic, minced
  • 1/2 cup (50 g) grated Parmesan cheese
  • 2 tablespoons (30 ml) olive oil
  • 1 tablespoon (14 g) butter
  • 1 teaspoon Italian seasoning
  • Pinch of red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste
  • Handful of fresh basil or parsley, chopped (optional)

Instructions

  1. Pat the chicken breasts dry with paper towels. Season both sides generously with salt, pepper, and Italian seasoning. (5 minutes)
  2. Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add chicken breasts and cook 5-6 minutes per side until golden brown and cooked through (internal temperature 165°F/74°C). Remove chicken and set aside. (12 minutes)
  3. Lower heat to medium. Add 1 tablespoon butter to the skillet. When melted, add minced garlic and chopped sun-dried tomatoes. Stir constantly for 1-2 minutes until fragrant but not browned. (2 minutes)
  4. Pour in 1/2 cup chicken broth to deglaze the pan, scraping up browned bits. Stir in 1 cup heavy cream and bring to a gentle simmer. (3-4 minutes)
  5. Stir in 1/2 cup grated Parmesan cheese until melted and sauce thickens slightly. Add more broth or cream if sauce is too thick. (3 minutes)
  6. Return chicken breasts to the pan, nestling them into the sauce. Spoon sauce over chicken and simmer together for 3-4 minutes to meld flavors and keep chicken juicy. (4 minutes)
  7. Taste sauce and adjust salt, pepper, and red pepper flakes if using. Sprinkle with chopped fresh basil or parsley before serving.

Notes

Do not overcrowd the pan when searing chicken to get a golden crust. Use room temperature chicken for even cooking. Lower heat before adding cream to avoid curdling. Freshly grate Parmesan for best sauce texture. Gentle simmering thickens the sauce perfectly. Butter adds a silky mouthfeel to the sauce. For dairy-free, substitute heavy cream with full-fat coconut milk and Parmesan with nutritional yeast.
