  • 4 boneless, skinless chicken breasts (about 1.5 pounds / 700 grams), pounded to even thickness
  • 2 tablespoons olive oil (extra virgin recommended)
  • 3 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped (packed in oil)
  • 1 cup chicken broth (preferably low sodium)
  • ¾ cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 tablespoons chopped fresh basil
  • 1 tablespoon chopped fresh thyme
  • Salt and pepper to taste
  • Red pepper flakes (optional, a pinch)

Instructions

  1. Pat the chicken breasts dry and pound them to about ½ inch thickness.
  2. Season both sides of the chicken with salt and pepper.
  3. Heat 2 tablespoons olive oil in a skillet over medium-high heat until shimmering.
  4. Sear the chicken breasts for 3-4 minutes per side until golden brown; cook in batches if needed.
  5. Remove chicken and tent loosely with foil to keep warm.
  6. Reduce heat to medium; sauté minced garlic and chopped sun-dried tomatoes for 1-2 minutes until fragrant and softened.
  7. Deglaze the pan with 1 cup chicken broth, scraping up browned bits.
  8. Stir in ¾ cup heavy cream and ½ cup grated Parmesan cheese; cook for 3-4 minutes until sauce thickens.
  9. Return chicken to the pan, reduce heat to low, cover, and simmer for 8-10 minutes until chicken reaches 165°F (74°C).
  10. Off the heat, stir in chopped basil and thyme; adjust seasoning with salt, pepper, and optional red pepper flakes.
  11. Serve over rice, pasta, or mashed potatoes, garnished with extra herbs if desired.

Notes

If sauce separates or looks curdled, stir vigorously off heat and add a splash of broth. Rest chicken before slicing to keep it juicy. Use sun-dried tomatoes packed in oil for best flavor. Medium to medium-high heat is ideal for searing to avoid burning garlic or cream.
