  • 16 ounces (450g) cream cheese, softened to room temperature
  • ¾ cup (90g) powdered sugar, sifted
  • 1 cup (240ml) heavy whipping cream, chilled

Instructions

  1. Prepare the crust: Crush 16 Oreo cookies finely using a food processor or by placing them in a zip-top bag and rolling with a pin until fine crumbs form. Mix crumbs with 5 tablespoons melted unsalted butter until the mixture holds together when pressed. Press evenly into the bottom of a 9-inch springform pan. Chill in the refrigerator for 10 minutes to set.
  2. Make the filling base: In a medium bowl, beat 16 ounces softened cream cheese with ¾ cup powdered sugar until smooth and creamy, about 2-3 minutes with an electric mixer on medium speed. Scrape down sides occasionally.
  3. Whip the cream: In a separate cold bowl, whip 1 cup heavy whipping cream until stiff peaks form, about 3-4 minutes on high speed.
  4. Combine filling: Gently fold half of the crushed Oreos (about 8 cookies) into the cream cheese mixture, then carefully fold in the whipped cream until fully incorporated and fluffy.
  5. Assemble the cheesecake: Spread the filling evenly over the chilled crust. Sprinkle the remaining crushed Oreos over the top and press lightly to adhere.
  6. Chill and set: Refrigerate the cheesecake for at least 4 hours, preferably overnight, until firm.
  7. Serve: Run a warm knife around the edges before releasing the springform pan. Slice with a sharp knife, wiping between cuts for clean slices.
