A quick, healthy, and creamy no-bake dessert made with pumpkin puree and chia seeds. This easy recipe requires only 5 minutes of active prep time and sets in the refrigerator for a rich, spiced pudding.

  • 1/4 cup (30g) chia seeds (black or white)
  • 3/4 cup (180ml) unsweetened almond milk (or coconut/oat milk)
  • 2 tablespoons (30ml) pure maple syrup
  • 1 teaspoon (5ml) vanilla extract
  • 1 teaspoon (2g) ground cinnamon
  • 1/4 teaspoon (0.5g) ground nutmeg
  • 1/4 teaspoon (0.5g) ground ginger
  • 1 pinch salt
  • Optional toppings: toasted pecans, pumpkin seeds, or whipped cream

Instructions

  1. In a medium mixing bowl, combine the pumpkin puree, milk, maple syrup, and vanilla extract. Whisk until fully combined and smooth.
  2. Sprinkle in the chia seeds, cinnamon, nutmeg, ginger, and salt. Whisk thoroughly to distribute the seeds evenly and prevent clumping.
  3. Let the mixture sit for 5 minutes, then whisk again vigorously to break up any seeds that have started to absorb liquid.
  4. Pour the mixture into serving jars or a large container. Cover with a lid or plastic wrap.
  5. Refrigerate for at least 4 hours, or preferably overnight, until the chia seeds have expanded and the mixture has set into a pudding-like consistency.
  6. Before serving, stir the pudding well. If it is too thick, add a splash of milk to reach the desired consistency.
  7. Top with toasted pecans, pumpkin seeds, or a drizzle of maple syrup. Serve chilled.

Notes

Use 100% pure pumpkin puree, not pumpkin pie filling. Whisking twice (once initially and once after 5 minutes) is crucial to prevent clumps. The pudding thickens as it sits; add more milk if desired. For best texture, refrigerate overnight.
