  • 3 tablespoons creamy peanut butter (48g)
  • 1 cup milk of choice (240ml)
  • 12 tablespoons pure maple syrup (15-30ml)
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon chia seeds (12g, optional)
  • Pinch of salt
  • Optional toppings: sliced banana, extra peanut butter, chopped nuts, cinnamon, dark chocolate chips

Instructions

  1. Mash the banana: Peel the ripe banana and place it in a medium mixing bowl. Use a fork or potato masher to mash until completely smooth with no lumps (about 30 seconds).
  2. Add the wet ingredients: Add peanut butter, milk, and maple syrup to the mashed banana. Whisk until completely smooth and well combined, ensuring no streaks of peanut butter remain.
  3. Add the dry ingredients: Add rolled oats, cinnamon, chia seeds (if using), and a pinch of salt. Stir with a spatula until evenly distributed.
  4. Divide into jars: Divide the mixture evenly between two 12 oz (350ml) mason jars or airtight containers.
  5. Seal and refrigerate: Put lids on jars and refrigerate for at least 6 hours, ideally 8-12 hours overnight.
  6. Add toppings and serve: In the morning, stir the oats. If too thick, add a splash of milk. Top with sliced banana, peanut butter drizzle, cinnamon, or other toppings. Serve cold or microwave for 30-60 seconds for warm oats.

Notes

For best texture, use rolled oats (not quick or steel-cut). Mash banana thoroughly to avoid brown chunks. Oats keep in fridge for up to 4 days; add toppings just before serving. For a warm version, microwave 30-60 seconds. Adjust sweetness based on banana ripeness.
