  • 1/2 cup (120ml) milk (any kind)

  • 1 medium ripe banana, mashed
  • 2 tablespoons (32g) creamy peanut butter
  • 1 tablespoon (15ml) maple syrup or honey (optional)
  • 1 tablespoon (12g) chia seeds (optional but recommended)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a mason jar or airtight container, mash the ripe banana with a fork until mostly smooth.
  2. Add the peanut butter and stir together with the mashed banana until combined.
  3. Pour in the milk and Greek yogurt. Stir until the mixture is smooth and creamy.
  4. Add the rolled oats, chia seeds (if using), vanilla extract, and a tiny pinch of salt. Stir until the oats are fully coated and submerged.
  5. Taste the mixture and add maple syrup or honey if desired; stir again.
  6. Seal the container and refrigerate for at least 6 hours, preferably overnight (8–12 hours).
  7. In the morning, stir the oats. If too thick, add a splash of milk. Serve cold or warm (microwave 30–45 seconds).
  8. Add toppings like sliced banana, extra peanut butter, or granola just before eating.

Notes

Use ripe bananas with brown spots for natural sweetness. Mix peanut butter with banana first to avoid clumps. For best texture, refrigerate at least 6 hours. Add toppings fresh to keep them crunchy. Store in fridge up to 4 days; if too thick, stir in a splash of milk.
