  • 1 teaspoon honey or maple syrup (optional)
  • ½ teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Mash 1 large ripe banana with a fork in a medium mixing bowl until smooth but slightly chunky (1-2 minutes).
  2. Stir in 2 tablespoons of creamy peanut butter until fully combined with the banana.
  3. Pour in ½ cup (120ml) milk and ¼ cup (60g) Greek yogurt; stir gently until smooth and creamy (about 30 seconds).
  4. Mix in ½ teaspoon vanilla extract, 1 teaspoon honey or maple syrup (optional), and a pinch of salt.
  5. Add ½ cup (45g) rolled oats and 1 tablespoon chia seeds; stir until evenly distributed.
  6. Spoon the mixture into two 8-ounce (240ml) jars or containers, leaving space at the top.
  7. Seal jars tightly and refrigerate overnight or for at least 6 hours.
  8. The next morning, stir the oats gently and add toppings like sliced bananas, crushed peanuts, or a drizzle of peanut butter before serving.

Use ripe bananas for natural sweetness and creaminess. Creamy peanut butter blends best for smooth texture. Adjust sweetness with honey or maple syrup as needed.
