  • 1 can (15 oz / 425g) pure pumpkin puree
  • 2 packages (8 oz each) cream cheese, softened
  • 1 cup (120g) powdered sugar
  • 1 tsp vanilla extract
  • 1 tsp pumpkin pie spice
  • 1 tsp cinnamon
  • 2 tbsp butter, melted
  • Eggs and vegetable oil (as required by cake mix instructions)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan and line with parchment paper.
  2. In a large bowl, combine dry cake mix, pumpkin puree, and pumpkin pie spice. Mix until just combined.
  3. Add eggs and vegetable oil (per cake mix directions). Beat on medium speed for 2 minutes until smooth.
  4. Pour batter into prepared pan and spread evenly.
  5. Bake for 20-25 minutes until edges pull away and a toothpick comes out clean.
  6. Let cake cool in pan for 10 minutes, then lift out using parchment and place on a cooling rack to cool completely.
  7. While cake cools, beat softened cream cheese, powdered sugar, vanilla, and a pinch of cinnamon until smooth.
  8. Once cake is cool, gently roll it up from one short end.
  9. Unroll cake carefully and spread cream cheese filling evenly over the surface, leaving a border at edges.
  10. Carefully roll the cake back up with the filling inside.
  11. Brush top with melted butter and sprinkle generously with powdered sugar.
  12. Refrigerate for at least 2 hours before slicing.

Notes

Ensure the cake is completely cool before rolling to prevent cracking. Use full-fat block cream cheese for the best texture. If the cake cracks while unrolling, it can still be patched up. Slice with a sharp knife and wipe between cuts for neat slices.
