  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 0.5 teaspoon ground nutmeg
  • 0.5 cup heavy cream
  • 1 tablespoon apple cider vinegar
  • Optional garnish: toasted pumpkin seeds, crème fraîche, fresh sage leaves

Instructions

  1. Preheat oven to 400°F (200°C). Line two large baking sheets with parchment paper.
  2. Peel the butternut squash, remove seeds, and cut flesh into half-inch cubes.
  3. Toss squash cubes with olive oil, salt, and pepper. Spread in a single layer on baking sheets.
  4. Roast for 30-40 minutes, flipping halfway, until edges are browned and tender.
  5. While squash roasts, heat a large Dutch oven over medium heat with a splash of oil.
  6. Sauté diced onions for 5-7 minutes until soft and translucent.
  7. Add minced garlic and cook for 1 minute, stirring constantly.
  8. Add roasted squash, vegetable broth, and nutmeg to the pot.
  9. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes.
  10. Remove from heat and puree soup with an immersion blender until smooth.
  11. Stir in heavy cream and apple cider vinegar. Adjust seasoning to taste.
  12. Serve hot with optional garnishes.

Notes

Roasting the squash until browned is crucial for depth of flavor. If the soup is too thick, add more broth. For a vegan version, substitute heavy cream with full-fat coconut milk. The soup freezes well without the cream; add cream upon reheating.
