Creamy Slow Cooker White Chicken Chili

A comforting, velvety white chicken chili made in a slow cooker. By blending half the cannellini beans, this recipe achieves a rich, creamy texture without needing heavy cream, resulting in a healthy yet indulgent meal perfect for busy weeknights.

  • 2 large boneless, skinless chicken breasts (about 1.5 lbs / 700g)
  • 2 cups (480 ml) low-sodium chicken broth
  • 1 can (4 oz / 113g) diced green chilies
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 cans (15 oz / 425g each) cannellini beans, drained and rinsed
  • 1 cup (150g) frozen or canned corn
  • 4 oz (113g) cream cheese, softened
  • ½ cup (120 ml) heavy cream
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • Salt and pepper to taste

Instructions

  1. Place chicken breasts in the bottom of a 6-quart slow cooker. Cut in half if very large.
  2. Scatter diced onion and minced garlic over the chicken.
  3. Pour in chicken broth, diced green chilies, cumin, chili powder, smoked paprika, salt, and pepper. Mix gently.
  4. Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours until chicken shreds easily.
  5. Remove chicken and shred using two forks. Set aside.
  6. Scoop out about half of the cannellini beans and corn. Blend until smooth (or mash directly in the pot).
  7. Pour blended bean mixture back into the slow cooker. Stir well.
  8. Add shredded chicken and remaining whole beans. Stir again.
  9. Stir in cream cheese and heavy cream until cream cheese is melted and incorporated.
  10. Cover and cook on HIGH for another 30 minutes to meld flavors and thicken sauce.
  11. Taste and adjust salt and pepper. Serve hot with desired toppings.

Notes

For a dairy-free version, omit cream cheese and heavy cream, substituting with coconut cream or cashew cream. Toasting spices before adding enhances flavor. Ensure beans are rinsed thoroughly to remove excess sodium. If freezing, omit dairy before freezing and add upon reheating to prevent separation.
