Instructions

  1. Melt the butter in a large pot over medium heat. Add the diced onion and cook for 4-5 minutes until soft and translucent.
  2. Add the minced garlic and tomato paste. Stir constantly for 1-2 minutes until the paste darkens slightly.
  3. Pour in the crushed tomatoes and broth. Stir to combine, scraping up any browned bits. Bring to a gentle simmer, then reduce heat to low. Let simmer for 10 minutes, stirring occasionally.
  4. Preheat oven to 400°F. Butter one side of each bread slice. Flip and pile on the shredded cheddar and Parmesan. Press gently. Cut each slice into 1-inch squares. Place cheese-side up on a parchment-lined baking sheet. Bake for 8-10 minutes until golden and bubbly.
