Instructions

  1. Prep the pork chops (5 minutes): Pat the pork chops dry with paper towels. Season both sides with a pinch of salt and pepper. Let them sit at room temperature for 10 minutes while you prep the breading station.
  2. Make the garlic herb butter (5 minutes): In a small bowl, combine the softened butter, minced garlic, parsley, thyme, lemon zest, and a pinch of salt. Mix until well combined. Set aside at room temperature.
  3. Set up the breading station (3 minutes): In the first shallow bowl, whisk together the egg and Dijon mustard. In the second bowl, combine the panko, almond flour, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix with a fork to distribute the spices evenly.
  4. Coat the pork chops (5 minutes): Working one at a time, dip each pork chop into the egg mixture, letting the excess drip off. Then press it firmly into the breading mixture, coating both sides. Place the breaded chops on a plate.
  5. Preheat the air fryer (2 minutes): Set your air fryer to 375°F. Let it preheat for 2-3 minutes.
  6. Cook the pork chops (12-14 minutes): Lightly spray the air fryer basket with cooking spray. Place the pork chops in a single layer—don’t overcrowd. Spray the tops of the chops lightly with cooking spray. Cook at 375°F for 6 minutes.   7. Add the butter and rest (5 minutes): As soon as the pork chops come out of the air fryer, top each one with a generous dollop of the garlic herb butter. Tent loosely with foil and let rest for 5 minutes.

Use a meat thermometer to ensure the internal temperature reaches 145°F; anything above 150°F may result in dry pork chops. If you don’t have an air fryer, bake at 400°F for 15-18 minutes, flipping halfway through.
