Bite-sized jalapeño peppers stuffed with a creamy cheddar and cream cheese mixture, wrapped in thick-cut bacon, and baked until crispy. A quick, easy, and crowd-pleasing party snack.

  • 12 medium jalapeño peppers
  • 1 package (8 ounces) full-fat cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • 12 strips thick-cut bacon
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Wash and dry the jalapeños. Slice each pepper in half lengthwise.
  3. Use a small spoon or fingers to scrape out seeds and white membranes to control heat level.
  4. In a medium bowl, combine softened cream cheese, shredded cheddar, garlic powder, smoked paprika, salt, and pepper. Mix until smooth.
  5. Spoon the cheese mixture into each jalapeño half, pressing gently to create a flat surface.
  6. Wrap each stuffed jalapeño half with a strip of thick-cut bacon, rolling it snugly and tucking the end under.
  7. Place wrapped poppers on the prepared baking sheet, leaving space between them.
  8. Bake for 15-18 minutes until bacon is crispy and golden brown and cheese is bubbly.
  9. Let cool for 5 minutes before serving to allow bacon to set.

Notes

Use thick-cut bacon to prevent burning. Ensure jalapeños are completely dry before wrapping to help bacon stick. Do not use toothpicks; wrap bacon tightly so it holds on its own. For a milder version, remove all seeds and membranes. For a spicier version, leave some seeds in or add serrano peppers.
