Achieve restaurant-quality, shatteringly crisp chicken wings without deep frying using a simple baking powder trick. These wings are coated in a sticky, sweet, and spicy honey BBQ glaze.

Ingredients

Scale
  • 2 to 3 pounds chicken wings (party cut: drumettes and flats)
  • 1 tablespoon aluminum-free baking powder
  • 1 teaspoon kosher salt
  • 1 teaspoon garlic powder
  • 1/2 cup BBQ sauce
  • 3 tablespoons honey
  • 1 tablespoon soy sauce
  • 1 teaspoon apple cider vinegar
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Pat chicken wings completely dry with paper towels.
  3. In a large bowl, toss wings with baking powder, salt, and garlic powder until evenly coated.
  4. Place a wire rack on a baking sheet lined with foil. Arrange wings in a single layer on the rack, ensuring they do not touch.
  5. Bake for 40 minutes without opening the oven door.
  6. Flip wings and bake for another 20 minutes until golden brown and crisp.
  7. While wings bake, combine BBQ sauce, honey, soy sauce, vinegar, and red pepper flakes in a small saucepan over medium heat. Stir until bubbling and melted.
  8. Transfer hot wings to a large bowl and toss with the warm glaze until coated.
  9. Serve immediately.

Notes

Use aluminum-free baking powder to avoid metallic taste. Do not overcrowd the pan to ensure air circulation. Sauce wings only after baking to prevent burning. Reheat in oven or air fryer to maintain crispiness; do not microwave.
