A quick and easy breakfast recipe featuring a crispy everything bagel topped with creamy mashed avocado and a perfectly cooked sunny-side up egg, delivering a satisfying crunch and rich flavor.

  • 1 large everything bagel
  • 1 ripe medium avocado, mashed
  • 1 large fresh egg
  • 1 teaspoon olive oil or butter
  • Pinch of salt, to taste
  • Freshly ground black pepper, to taste
  • 1 teaspoon lemon juice
  • Pinch of red pepper flakes (optional)
  • Everything bagel seasoning (optional)

Instructions

  1. Slice the everything bagel in half and toast in a toaster or toaster oven on medium-high for 3-5 minutes until golden brown and crispy.
  2. Cut the ripe avocado in half, remove the pit, scoop the flesh into a small bowl, add lemon juice and a pinch of salt, then mash with a fork or potato masher until smooth but slightly chunky.
  3. Heat olive oil or butter in a non-stick skillet over medium heat. Crack the egg gently into the pan and cook for 2-3 minutes until whites are set but yolk remains runny. Season with salt and black pepper.
  4. Spread the mashed avocado evenly onto each toasted bagel half.
  5. Place the cooked egg on top of the avocado spread carefully to keep the yolk intact.
  6. Sprinkle red pepper flakes and everything bagel seasoning on top if desired, and finish with flaky sea salt.

Notes

If avocado is underripe, warm in microwave for 10 seconds before mashing. Use medium heat for cooking egg to avoid rubbery whites or burnt edges. Toast bagel on medium setting to avoid brittleness. For multiple servings, keep finished toasts warm in a low oven (200°F/90°C).
