  • 1 teaspoon garlic powder

  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 tablespoon aluminum-free baking powder
  • 1 tablespoon olive oil
  • 1 tablespoon freshly squeezed lime juice (optional)

Instructions

  1. Pat the chicken wings dry with paper towels to ensure crispiness (about 10 minutes).
  2. In a bowl, combine garlic powder, paprika, salt, black pepper, and baking powder to make the dry rub.
  3. Toss the wings in olive oil, then coat evenly with the dry rub.
  4. Preheat the grill to medium-high heat, around 375°F (190°C).
  5. Place wings on the grill rack or basket and cook for 20-25 minutes, flipping every 5 minutes to avoid burning and promote even crisping.
  6. While wings grill, whisk together honey, sriracha, and lime juice in a small bowl to prepare the glaze.
  7. During the last 5 minutes of grilling, brush the wings generously with the honey sriracha glaze, flipping and glazing again to build a sticky, caramelized coating.
  8. Use a meat thermometer to ensure wings reach an internal temperature of 165°F (74°C). If unavailable, cut open a wing to check that juices run clear.
  9. Remove wings from the grill and let rest for 5 minutes to allow juices to redistribute and glaze to set.

Pat wings dry thoroughly for best crispiness. Use aluminum-free baking powder to avoid off-flavors. Apply glaze in the last few minutes to prevent burning.
