  • 2 large eggs (room temperature)
  • ¼ cup unsalted butter, melted and cooled
  • 8 hot dogs, cut into bite-sized chunks
  • 3 tablespoons unsalted butter, melted (for glaze)
  • 1 tablespoon honey (for glaze)
  • Pinch of smoked paprika (optional, for glaze)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease your muffin tin.
  2. In a medium bowl, whisk together the dry ingredients: cornmeal, flour, sugar, baking powder, and salt.
  3. In a separate bowl, beat the eggs lightly, then stir in the milk and melted butter.
  4. Pour the wet ingredients into the dry and mix gently until just combined; do not overmix.
  5. Fold in the chopped hot dog pieces evenly throughout the batter.
  6. Spoon the batter into the muffin tin, filling each cup about ¾ full.
  7. Bake for 15-18 minutes, or until the tops are golden brown and a toothpick inserted in the center comes out clean.
  8. While the muffins bake, whisk together melted butter, honey, and smoked paprika to prepare the glaze.
  9. Once baked, remove muffins from the oven and immediately brush the buttery glaze over each one.
