A quick and easy salad featuring creamy burrata, sweet-tart Fuyu persimmons, peppery arugula, and a honey drizzle, perfect for impressing guests in under 15 minutes.

  • 34 medium Fuyu persimmons
  • 8 ounces burrata cheese (2 small balls)
  • 5 ounces baby arugula (about 5 cups)
  • 34 tablespoons honey
  • 1/3 cup shelled pistachios, roughly chopped
  • 2 tablespoons extra virgin olive oil
  • Flaky sea salt (e.g., Maldon) and black pepper to taste
  • Optional: Balsamic glaze for drizzling
  • Optional: 1/4 cup pomegranate seeds

Instructions

  1. Prep the persimmons: Wash and dry persimmons. Slice off the top stem and a thin slice from the bottom. Cut into thin rounds, about 1/4-inch thick.
  2. Toast the pistachios: Place chopped pistachios in a dry skillet over medium heat. Shake pan every 30 seconds until fragrant and slightly darker, about 2-3 minutes. Transfer to a bowl to cool.
  3. Prepare the burrata: Remove burrata from fridge 15 minutes before serving. Pat dry with paper towel. Leave whole or tear into pieces.
  4. Arrange the arugula: Spread arugula evenly on a large serving platter or wide shallow bowl.
  5. Layer the persimmons: Arrange persimmon slices over arugula in a single layer, overlapping slightly in a circular pattern.
  6. Add the burrata: Place burrata balls on top of persimmons. Gently press with the back of a spoon to create a small crack.
  7. Drizzle with honey and olive oil: Drizzle honey in a zigzag pattern over the salad, then do the same with olive oil.
  8. Sprinkle with pistachios and season: Sprinkle toasted pistachios evenly. Finish with flaky sea salt and black pepper.
  9. Serve immediately: Best eaten right away while arugula is crisp and burrata is creamy.

Notes

Use Fuyu persimmons, not Hachiya. Let burrata come to room temperature for best texture. Assemble just before serving to prevent wilting. Toast pistachios in advance for convenience.
