  • 1.5 pounds (about 680g) boneless, skinless chicken breasts or thighs
  • 1 can (14.5 oz or 411g) fire-roasted diced tomatoes
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 4 cups (960ml) low-sodium chicken broth
  • 1 cup (about 150g) frozen corn
  • 1 can (15 oz or 425g) black beans, drained and rinsed
  • 1 can (4 oz or 113g) diced green chiles
  • 2 teaspoons cumin
  • 1 tablespoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano (preferably Mexican)
  • 2 tablespoons fresh lime juice
  • 2 tablespoons olive oil
  • Salt and black pepper to taste (start with 1 teaspoon salt and ½ teaspoon pepper)
  • For serving: tortilla chips, shredded cheese (cheddar or Monterey Jack), sour cream, fresh cilantro, diced avocado, lime wedges

Instructions

  1. Prep the ingredients: Dice the onion, mince the garlic, drain and rinse the black beans, and measure out all your spices.
  2. Season and sear the chicken: Pat the chicken dry with paper towels. Season both sides with ½ teaspoon salt, ¼ teaspoon pepper, and ½ teaspoon cumin. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the chicken and cook for 4-5 minutes per side, until golden brown. Transfer to a plate and set aside.
  3. Char the aromatics: In the same skillet, add the remaining 1 tablespoon olive oil. Add the diced onion and cook for 3-4 minutes, stirring occasionally, until softened and starting to brown. Add the minced garlic and cook for 30 seconds, until fragrant.
  4. Build the base: Pour in about ½ cup of the chicken broth and stir, scraping up all the browned bits from the bottom of the pan. Let it simmer for 1 minute, then pour everything into the crockpot.
  5. Combine everything in the crockpot: Add the remaining chicken broth, fire-roasted tomatoes, green chiles, black beans, frozen corn, cumin, chili powder, smoked paprika, dried oregano, and ½ teaspoon salt. Stir together. Nestle the seared chicken into the liquid.
  6. Cook on high: Cover the crockpot and cook on HIGH for 20-25 minutes. The soup should be bubbling gently around the edges.
  7. Shred the chicken: After 20 minutes, carefully remove the chicken to a cutting board. Use two forks to shred it into bite-sized pieces. Return the shredded chicken to the crockpot and stir.
  8. Finish with lime juice: Stir in the fresh lime juice. Taste and adjust seasoning—add more salt, pepper, or chili powder if needed. If the soup is too thick, add a splash more broth. If it’s too thin, let it simmer uncovered for 5 minutes.
  9. Serve immediately: Ladle the soup into bowls and top with your favorite garnishes.

Notes

Don’t skip searing the chicken—it adds deep flavor. For a vegetarian version, swap chicken for two cans of drained chickpeas and use vegetable broth. For a thicker soup, mash some black beans before adding. The soup is even better the next day.
