This Easy Crockpot Taco Soup is a simple, 5-ingredient dinner that comes together in under 10 minutes of prep. It’s hearty, flavorful, and perfect for busy weeknights—a true crowd-pleaser that tastes like home.

  • 1 lb ground beef (or ground turkey)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes (fire-roasted preferred)
  • 1 can (15 oz) corn, drained
  • 1 packet (1 oz) taco seasoning
  • 2 cups beef broth (low-sodium preferred)

Instructions

  1. Brown the ground beef in a large skillet over medium-high heat until no longer pink, about 5 minutes. Drain the fat.
  2. Transfer the cooked beef to a 6-quart slow cooker.
  3. Add the black beans, diced tomatoes, and corn to the slow cooker.
  4. Sprinkle the taco seasoning over the top and pour in the beef broth. Stir until the seasoning is mostly dissolved.
  5. Cover and cook on low for 4-6 hours or on high for 2-3 hours, until the soup is bubbling and aromatic.
  6. Ladle into bowls, let cool for 2-3 minutes, and serve with desired toppings (shredded cheese, sour cream, avocado, crushed tortilla chips, cilantro, lime).

Notes

For best flavor, brown the beef before adding to the crockpot. Use low-sodium broth and no-salt-added canned goods to control salt levels. To make your own taco seasoning, mix 1 tbsp chili powder, 1 tsp cumin, 1 tsp garlic powder, 1 tsp onion powder, 1/2 tsp paprika, 1/2 tsp oregano, and 1/4 tsp cayenne (optional). The soup thickens as it sits; add a splash of broth when reheating. Freezes well for up to 3 months.
