  • 1 tablespoon maple syrup (optional, skip if banana is very ripe)
  • 1 tablespoon chia seeds (optional but recommended)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Mash the banana first: Peel the spotty banana and mash it thoroughly with a fork in your jar or mixing bowl until it looks like baby food, with no big chunks remaining.
  2. Add the wet ingredients: Pour in the milk, peanut butter, maple syrup (if using), and vanilla extract. Stir everything together with your fork until the peanut butter is mostly incorporated.
  3. Add the dry ingredients: Toss in the rolled oats, chia seeds, and a tiny pinch of salt. Stir until everything is combined and the oats are fully submerged in the liquid. If it looks too dry, add a splash more milk.
  4. Seal and shake (optional but fun): Put the lid on your jar and give it a good shake to distribute everything evenly.
  5. Refrigerate overnight: Place the jar in the fridge for at least 6 hours, but overnight is ideal (8–12 hours).
  6. Serve cold or warm: In the morning, stir the oats. If too thick, add a splash of milk and stir again. Top with sliced banana, a drizzle of peanut butter, or other desired toppings. Eat cold or microwave for 45 seconds for warm oats.

Notes

Banana ripeness is key: use a spotty banana for natural sweetness. Do not skip the salt—it enhances the peanut butter flavor. For thicker oats, use less milk; for thinner, add more. Oats keep in the fridge for up to 5 days; best between days 1–3. Do not freeze.
