Instructions

  1. Drain marinated artichokes and fresh mozzarella balls. Slice cured meats into bite-sized chunks and halve the cherry tomatoes. Slice roasted red peppers into 1-inch strips if not pre-sliced.
  2. Assemble the skewers by threading one piece of marinated artichoke, a folded slice of cured meat, a mozzarella ball, a Kalamata olive, a cherry tomato half, a strip of roasted red pepper, and finish with a fresh basil leaf. Mix the order as desired.
  3. Prepare the dips: transfer store-bought dips to small serving bowls. For garlic and herb cream cheese dip, mix softened cream cheese with minced garlic and chopped fresh herbs. For roasted red pepper hummus, blend chickpeas, roasted red peppers, tahini, lemon juice, garlic, and olive oil until smooth.
  4. Arrange the skewers on a large serving tray. Surround with dips and drizzle olive oil and balsamic vinegar in a shallow dish for dipping. Garnish with extra basil leaves or cracked black pepper.
  5. Let the skewers sit at room temperature for about 10 minutes before serving to allow flavors to meld.
