Easy Cozy Crockpot Chicken Noodle Soup Using Rotisserie Chicken

This is the easiest, most flavorful pot of soup you’ll ever make. Using a rotisserie chicken as a shortcut, this cozy crockpot chicken noodle soup comes together with minimal prep and delivers rich, soul-soothing flavor every time.

  • 1 rotisserie chicken (about 23 pounds)
  • 8 cups low-sodium chicken broth
  • 2 cups water
  • 3 medium carrots, peeled and sliced
  • 3 celery stalks, sliced
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt (or to taste)
  • 8 ounces egg noodles
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Instructions

  1. Prep the chicken (5 minutes): Remove the rotisserie chicken from its packaging. Using two forks, shred the meat into bite-sized pieces, discarding the skin and bones. You should end up with about 4 to 5 cups of shredded chicken. Set it aside.
  2. Layer the vegetables (5 minutes): Place the diced onion, sliced carrots, and sliced celery in the bottom of your slow cooker. Add the minced garlic on top.
  3. Add the seasonings (2 minutes): Sprinkle the dried thyme, dried rosemary, bay leaf, black pepper, and salt over the vegetables. Give everything a quick stir to coat the vegetables in the herbs.
  4. Pour in the liquid (1 minute): Pour the chicken broth and water over the vegetables and seasonings. The liquid should cover the vegetables completely. If it doesn’t, add a little more broth or water.
  5. Add the chicken (2 minutes): Gently place the shredded rotisserie chicken on top of the liquid. Don’t stir it in yet.
  6. Cook on low (6-8 hours) or high (3-4 hours): Cover the slow cooker and cook on low for 6 to 8 hours or on high for 3 to 4 hours.
  7. Cook the noodles (10 minutes): About 20 minutes before you’re ready to serve, cook the egg noodles according to the package directions. Drain the noodles and set them aside.
  8. Finish the soup (5 minutes): About 15 minutes before serving, add the cooked noodles to the slow cooker. Stir gently to combine. Let everything heat through for another 10 minutes. Taste the broth and adjust the salt and pepper if needed.
  9. Serve (2 minutes): Ladle the soup into bowls, making sure each serving gets plenty of chicken, vegetables, and noodles. Garnish with fresh parsley if desired. Serve hot and enjoy!

Notes

For leftovers, store the noodles separately from the soup to prevent them from becoming mushy. Add them back when reheating. If you prefer a thicker broth, make a cornstarch slurry (2 tablespoons cornstarch mixed with 1/4 cup cold water) and stir it in about 30 minutes before serving. To prevent the soup from becoming too salty, use low-sodium broth and go easy on the salt at the beginning; the rotisserie chicken is already seasoned.
