  • 1 cup heavy whipping cream, cold
  • 2 tablespoons powdered sugar
  • Vanilla bean paste or seeds scraped from 1 vanilla bean pod

Instructions

  1. Peel the peaches and slice into 1/2-inch thick wedges. Toss with granulated sugar, lemon juice, cinnamon, flour, and vanilla extract in a large bowl until evenly coated.
  2. In a separate bowl, mix rolled oats, flour, brown sugar, cinnamon, and salt. Cut cold butter into the mixture using a pastry cutter or fingers until it resembles coarse crumbs.
  3. Pour the peach filling evenly into a 9×13-inch baking dish. Sprinkle the crisp topping evenly over the peaches without packing it down.
  4. Preheat oven to 350°F (175°C). Bake the crisp for 35-40 minutes until the topping is golden brown and peach juices bubble around the edges. Cover loosely with foil after 25 minutes if topping browns too quickly.
  5. Chill mixing bowl and beaters in freezer for 10 minutes. Beat heavy cream on medium-high speed until soft peaks form. Add powdered sugar and vanilla bean paste or seeds, then continue whipping until stiff peaks form.
  6. Let the crisp cool for 10 minutes before serving. Top each serving with a dollop of vanilla bean whipped cream.
