  • 3 medium ripe bananas, mashed
  • 1 ¾ cups (220g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon (optional but recommended)
  • ½ cup (115g) unsalted butter, softened
  • ½ cup (100g) packed brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup (170g) chocolate chips (semi-sweet or milk chocolate)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, salt, and ground cinnamon. Set aside.
  3. In a large bowl, beat the softened butter and brown sugar with a hand or stand mixer until light and fluffy, about 2-3 minutes.
  4. Beat in the eggs one at a time, then add the vanilla extract, mixing until fully incorporated.
  5. Stir in the mashed bananas until evenly combined.
  6. Gradually fold the dry ingredients into the wet mixture with a spatula, being careful not to overmix; the batter should be thick but slightly lumpy.
  7. Gently fold in the chocolate chips, tossing them in a little flour beforehand to prevent sinking.
  8. Pour the batter into the prepared loaf pan, smoothing the top. Fill the pan about ¾ full.
  9. Bake for 55-65 minutes, checking at 55 minutes with a toothpick; it should come out clean or with a few moist crumbs.
  10. Let the bread cool in the pan for 15 minutes, then transfer to a cooling rack to cool completely before slicing.

Notes

Use very ripe bananas with brown spots for best sweetness and moisture. Toss chocolate chips in a little flour before folding in to prevent sinking. If oven runs hot, tent bread with foil after 40 minutes to avoid over-browning. Let bread cool before slicing for best texture. Substitutions include almond flour for gluten-free, coconut oil for dairy-free, and flax eggs for vegan.
