A quick and easy no-cook lunch featuring smoked ham, Swiss cheese, crisp apple slices, and a tangy-sweet homemade honey mustard dip, all packed in a bento box for a portable, satisfying meal.

Ingredients

Scale
  • 8 slices smoked deli ham (about 6 oz)
  • 4 slices Swiss cheese (about 4 oz)
  • 1 cup crisp apple slices (like Honeycrisp or Granny Smith)
  • 1/2 cup baby carrots or cucumber rounds
  • 1/4 cup red grapes
  • A handful of almonds or your favorite crackers (optional)
  • 3 tablespoons Dijon mustard
  • 2 tablespoons honey
  • 1 tablespoon mayonnaise
  • 1 teaspoon apple cider vinegar
  • A pinch of salt and black pepper

Instructions

  1. Make the honey mustard dip: In a small bowl, whisk together 3 tablespoons Dijon mustard, 2 tablespoons honey, 1 tablespoon mayonnaise, and 1 teaspoon apple cider vinegar. Add a pinch of salt and pepper. Taste and adjust. If too thick, add a teaspoon of water. Set aside.
  2. Prep the ham and cheese: Lay out 8 slices of ham. Fold each slice in half, then roll it up into a little log. Do the same with the Swiss cheese slices—cut them in half if large, then roll them up.
  3. Slice the apples: Cut the apple into thin wedges, about 8-10 slices. Toss in a little lemon juice or water to prevent browning if prepping ahead.
  4. Arrange the bento box: Place the honey mustard dip in the smallest compartment. Arrange the ham rolls and cheese rolls in one section, the apple slices in another, and the baby carrots and grapes in the remaining spaces. Add almonds or crackers in any empty spots. Close the lid tightly.
  5. Chill or pack immediately: If eating within 2 hours, it’s fine at room temperature. Otherwise, refrigerate until ready to eat. The dip can be made a day ahead.

Notes

Keep the dip separate until eating to prevent soggy ham. Roll ham and cheese tightly for easy dipping. For best texture, let cheese sit at room temperature for 5 minutes before rolling. The dip can be made up to a week ahead and stored in the fridge.
