Instructions

  1. In a mixing bowl, combine 2 cups (250g) of all-purpose flour and ½ teaspoon salt. Stir briefly to distribute evenly.
  2. Make a well in the center of the flour and crack in 3 large, room temperature eggs. Add 1 tablespoon olive oil. Using a fork, gently beat the eggs and oil, gradually pulling in flour from the edges.
  3. Once the mixture becomes too thick to stir, start kneading with your hands. Continue pulling in flour until a rough dough forms.
  4. Turn the dough onto a lightly floured surface. Knead for 8-10 minutes until smooth and elastic. If sticky, sprinkle a bit more flour; if too dry, wet your hands and continue kneading.
  5. Wrap the dough in plastic wrap or cover with a clean towel. Let it rest at room temperature for at least 30 minutes.
  6. Divide the dough into two balls. On a floured surface, roll each ball out into a thin sheet about 1/16 inch (1.5mm) thick. Dust with semolina flour if needed to prevent sticking.
  7. Use a sharp knife or pizza cutter to slice the dough into desired pasta shapes such as fettuccine, tagliatelle, or small squares for ravioli. Toss cut pasta lightly with semolina to prevent clumping.
  8. Bring a large pot of salted water to a boil. Cook fresh pasta for 2 to 3 minutes until tender but slightly firm to the bite.
  9. Drain the pasta and toss with your favorite sauce or simply olive oil and garlic. Serve immediately.
