This Easy Homemade Pumpkin Spice Syrup for Coffee is a quick and simple recipe that transforms your morning cup into a cozy fall treat. Made with whole spices and real pumpkin, it’s richer and more flavorful than store-bought versions.

  • 1 cup (200 g) granulated sugar
  • 1/2 cup (100 g) light brown sugar, packed
  • 2 whole cinnamon sticks
  • 2 thin slices fresh ginger (about the size of a quarter)
  • 45 whole cloves
  • 1/4 whole nutmeg (or 1/2 teaspoon freshly grated)
  • 2 tablespoons pumpkin purée (100% pumpkin, not pie filling)
  • 1 teaspoon vanilla extract

Instructions

  1. In a medium saucepan over medium heat, combine the water, granulated sugar, and packed brown sugar.
  2. Add the cinnamon sticks, sliced fresh ginger, whole cloves, and freshly grated nutmeg to the saucepan.
  3. Stir gently with a wooden spoon until the sugars have completely dissolved, about 2-3 minutes.
  4. Whisk in the pumpkin purée until fully incorporated.
  5. Bring the mixture to a gentle simmer (small bubbles, not a rolling boil) and let it simmer for 5-7 minutes to infuse the spices.
  6. Remove the saucepan from the heat and stir in the vanilla extract. Let the syrup cool in the saucepan for about 10 minutes.
  7. Place a fine-mesh strainer over a glass measuring cup or storage jar. Pour the syrup through the strainer, pressing on the solids with the back of a spoon to extract all the liquid. Discard the solids.
  8. Let the strained syrup cool completely to room temperature. It will thicken slightly as it cools. Transfer to a clean glass jar, seal tightly, and refrigerate.

Notes

For best flavor, use whole spices instead of ground to avoid a gritty texture. The syrup can be stored in the refrigerator for 2-3 weeks. If it crystallizes, place the sealed jar in hot water or microwave briefly. This syrup is also great in chai lattes, oatmeal, or over pancakes.
