These honey mustard baked pork chops are perfectly glazed, tender, and come together on a single sheet pan for easy cleanup. The sweet and tangy glaze balances perfectly with juicy pork and roasted vegetables.

  • 46 bone-in pork chops, about 1 inch thick
  • 1/4 cup honey
  • 3 tablespoons Dijon mustard
  • 2 tablespoons whole grain mustard
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 3 garlic cloves, minced
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon smoked paprika
  • 1 pound baby potatoes, halved (Yukon Gold or red potatoes)
  • 1/2 pound fresh green beans, trimmed (optional)
  • 2 sprigs fresh rosemary (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Let the pork chops sit at room temperature for about 15 minutes.
  2. In a medium bowl, whisk together honey, Dijon mustard, whole grain mustard, olive oil, apple cider vinegar, minced garlic, salt, pepper, and smoked paprika. Taste and adjust salt if needed.
  3. Halve the baby potatoes (or cut larger potatoes into 1-inch chunks). Trim the green beans if using. Place the potatoes on the sheet pan first.
  4. Pat the pork chops dry with paper towels. Place them in the bowl with the glaze and turn to coat each chop thoroughly. Let them sit in the glaze for about 5 minutes.
  5. Spread the potatoes in a single layer on the sheet pan. Drizzle with a little olive oil and a pinch of salt. Place the glazed pork chops on top of the potatoes, spacing them evenly. Pour any remaining glaze over the pork and potatoes.
  6. Roast for 20 minutes. Remove the pan, add the green beans (if using) around the pork, and flip the pork chops over using tongs. Return to the oven.
  7. Continue roasting for another 10-15 minutes, until the internal temperature of the pork reaches 145°F (63°C) and the potatoes are tender and golden.
  8. Remove the pan from the oven and let the pork rest for 5 minutes. Garnish with fresh rosemary sprigs before serving.

Notes

For extra flavor, sear the pork chops in a hot skillet for 2 minutes per side before roasting. Use a meat thermometer to avoid overcooking. If potatoes aren’t done when pork is, remove pork and continue roasting potatoes for 5-10 minutes.
